High Protein Peanut Butter Chocolate Chip Cookies

If you’re looking for a sweet treat that helps you hit your protein goals, these peanut butter chocolate chip protein cookies are a great option! I wanted to create a cookie that was high in protein without being overly dense, dry, or tasting like a protein bar. They’re soft, peanut-buttery, and packed with chocolate chips, with about 9 grams of protein per cookie and under 100 calories each. They’re perfect for when you want something sweet while still keeping your nutrition goals in mind.
Ingredients
1 Tbsp ground flaxseed
1½ Tbsp water
½ cup PB2
½ cup peanut flour
1 scoop vanilla protein powder
½ tsp baking soda
1 Tbsp natural peanut butter
1 Tbsp Greek yogurt
⅛ cup syrup
¼–⅓ cup water, as needed
Pinch of salt
Sprinkle of cinnamon
2 Tbsp chocolate chips
Directions
Make the flax egg: Mix the ground flaxseed with 1½ Tbsp water and let it sit for 3–5 minutes to thicken.
Combine the dry ingredients: In a large bowl, mix the PB2, peanut flour, protein powder, and baking soda.
Add the wet ingredients: In a separate bowl, mix together the peanut butter, Greek yogurt, syrup, and hydrated flax mixture. Add to the dry ingredients and stir to combine.
Adjust the consistency: Add ¼ cup water and mix. If the dough is too dry, add additional water 1 Tbsp at a time until you reach a soft, scoopable cookie-dough consistency.
Add the mix-ins: Fold in the salt, cinnamon, and chocolate chips.
Bake: Scoop the dough into balls onto a parchment-lined baking sheet and gently flatten each one. Bake at 350°F for about 8 minutes. Let cool before enjoying.
