Soft, lightly spiced, and full of cozy fall flavor 🍎 These Apple Cider Protein Cookies are an easy way to add a little extra protein to your favorite seasonal treat. They’re made with apple cider, applesauce, vanilla protein powder, and warm spices, then finished with an optional cinnamon apple cider glaze.
Ingredients
Dry Ingredients
2 cups flour
½ cup vanilla protein powder
Âľ teaspoon baking powder
1 teaspoon cinnamon
ÂĽ teaspoon ground ginger
Wet Ingredients
ÂĽ cup melted butter
Âľ cup brown sugar
½ cup apple cider
ÂĽ cup applesauce
Optional Apple Cider Glaze
1 tablespoon apple cider
½ cup powdered sugar
â…› teaspoon cinnamon
Instructions
Preheat the oven to 350°F and line a baking sheet with parchment paper or lightly grease it.
Mix the dry ingredients. In a medium bowl, whisk together the flour, vanilla protein powder, baking powder, cinnamon, and ground ginger.
Mix the wet ingredients. In a separate bowl, combine the melted butter, brown sugar, apple cider, and applesauce until well combined.
Combine. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms. Be careful not to overmix.
Scoop the cookies. Scoop approximately 1 tablespoon of dough at a time and gently roll into loose balls. Place them on the prepared baking sheet, leaving a little space between each cookie.
Bake for 8–10 minutes, or until the cookies are set.
Cool and glaze. Allow the cookies to cool slightly. If using the glaze, whisk together the apple cider, powdered sugar, and cinnamon. Drizzle or spoon the glaze over the cookies while they are still slightly warm.
Tips
For a stronger apple cider flavor, use a fresh, flavorful apple cider rather than apple juice.
Let the cookies cool for a few minutes before glazing so the glaze sets without completely melting into the cookies.
Store leftovers in an airtight container at room temperature.
